San Diego Catering company, Eco Caters provided a Vegetarian Feast for a beautiful backyard wedding.
On this warm summer day, guest were greeted by adorable ice teas served in tiny mason jars. Which really helped set the mood for this simple, sweet and beautiful backyard wedding. Not really a backyard, more of a large field complete with horses and a pond! The bride chose to stay sustaible by using baby succulents as her favors and large ones for centerpieces. She painted reclaimed wood for her table numbers and choose fresh honey colored linens for all the long, family styled tables. The groom made his own beer, San Diego caterer, Eco Caters served amazing local, organic food, many hot air balloons flew overhead, and the great Jesi Haack was there to flood every corner with beauty and creative details.
We started the hungry bunch off with our Chef’s Choice Cheese Display with Market Fruit and Preserves, freshly made Mezze Platter with Hummus Trio, Tabouleh, Olive Salad, and Warm Pita. Then, San Diego caterer, Eco Caters served up a seriously delicious buffet of Farmers Market Salad with the Best of the Market Greens, strawberries and goatcheese, all served with a Pear Vinaigrette Dressing. The buffet continued with our savory Nuts about Mushrooms Pasta Penne with Sherry, spicy Vegetarian Burritos with Rice and Black Beans, Mirpoix Quinoa, and Grilled Broccolini with Garlic and Lemon. For dessert the newlyweds presented their guest with a refreshing acia bar, featuring Sambazon sorbet, complete with healthy toppings. What a great way to finish off a summer meal!
The guest then danced under the stars to the pleaseing beats of DJ Chris Chamberlin. As the bride and groom ran to their get away car and escaped into the night.

The BBQ buffet prepared by San Diego Catering company, Eco Caters, was a hit at this company picnic.
When I asked our chef to prepare a custom menu for a new client, he got very excited, ,not because it was custom, but because she wanted the menu to feature different homemade BBQ sauces. Our kitchen was filled with the most amazing aroma the morning of this event. San Diego Caterer, Eco Caters, prepared a BBQ including a salad of market fresh Mixed Greens with Cucumber, Tomato, Carrot, and Garlic Croutons with House Made Buttermilk Ranch, Grilled Jidori Chicken with Sherry Vinegar and Smoked Tomato BBQ Sauce, Eden Farms Baby Back Ribs with Carolina Style Cider Vinegar BBQ Sauce, Cabernet Vinegar and Roasted Garlic Braised Brisket. For sides guest had vegetarian Grilled and Smoked Onion BBQ Beans, Cali Creole Potato Salad with Mirepoix and House Mustard, and local Corn on the Cobb. Everything was served on our biodegradable plates and forks. All the sauces were made from scratch by San Diego Catering company, Eco Caters. This was a farm fresh meal, and guests could taste it! San Diego Wedding Catering Company Prepared an Organic Meal
Eco Caters, a San Diego Wedding Caterer, helped prepare a spicy and savory meal for this super fun and laid back couple. During their first tasting it was clear they had a few ideas. They wanted something spicy and Brussels sprouts. Eco Caters was their to give them their dream meal.
Guest started out with some savory stationary appetizers, including our Chef’s Choice Cheese Display with Market Fruit and Preserve and Local Honey, and our very popular Hummus Trio with Tabouli, Olive Salad, and Grilled Flatbread. After minguling and chatting with the most calm couple I have ever met, guest feasted on our fresh Farmers Market Salad which includes, Best of the Market greens and vegetables with a house vinaigrette dressing. They were then treated to our sweet Kahlua Pork and spicy Creole Style Blackened Catfish. For sides we offered decadent Brussels Sprouts with Mustard and Mirepoix Quinoa. For dessert this couple chose one of Enticing Tables beautiful cupcake displays to help them show off their dessert. San Diego Wedding Caterer, Eco Caters, served coffee and assorted teas.
The ceremony, cocktail hour, dinner, and dancing all took place in their backyard. It was amazing. This couple completely changed their entire backyard. They moved out all their summer furniture and replaced it with long tables and lush linens. After the ceremony the chairs were moved to the tables, exposing their dance floor! The bar was set in a far corner, which worked great for the flow of the party. They even had space for a live band. San Diego Wedding Catering company, Eco Caters, was set up in their front yard, hidden from the rest of the party. This just shows that with a little elbow grease, anything is possible.

From the moment we met this couple, their dedication to being green and aiding in the protection of our earth was very prevalent. They chose centerpieces that used brightly colored citrus fruits, which guest took home to use later. They also chose to serve their meal on our very cool Verterra plates. They even had us save them to be re-used after the wedding! We were so happy to be able to cater their wedding.
San Diego caterer, Eco Caters, served up a filling meal of an organic Farmers Market Salad with a House Vinaigrette Dressing, savory Braised Beef Brisket with Tomato, Garlic, Olives, and Preserve Lemon, and our most popular Grilled Chicken Breast with Mango and Avocado. The sides consisted of our decadent Garlic Smashed Potatoes, and summer fresh Grilled Farmer’s Market Vegetables.
Guest really enjoyed the meal and the couple enjoyed being able to serve everyone a healthy organic meal. We purchase most of our food from local farmers and can provide totally compost-able corn products, for those who want something different from china and silver. We even have Verterra plates. Eco Caterers, a San Diego Wedding Caterer, Serves Yummy Small Bites at a Wedding at Powerhouse Park
This young, fun couple wanted something different than a normal sit down meal or buffet for their wedding. They knew they had a very social group of friends and family, so they chose San Diego Wedding caterer, Eco Caters, to provide a stationary appitzer buffet for their wedding reception.
The meal consisted of Maggie’s Wild Arugula with Julienne Onion, Feta, and a refreshing Pear Mustard Seed Vinaigrette, San Diego Catering company Eco Caters, decadent Albacore Salad Tartine with Chive and Nicoise Olives, filling Southern Pasta Salad with Local Olives, Celery, Onion, and Lemon, Spicy Chicken Skewers with Marjoram Red Pepper Yogurt, and our very popular Organic Beef Sliders with Smoked Cheddar and Tomato.
For dessert, the brides friend provided the most perfect lemon cupcakes on a very cool homemade stand.
The room was filled with pops of yellow and gray, which matched the venue and its wonderful sunset very well. Alesha Ballón, the designing diva for Ever After Events, worked really hard to make this brides vision come true. Tables were set with adorable yellow flower arrangements, each with the table named after them. They had an all yellow candy buffet, and even made yellow and gray signs for the buffet! You could tell a lot of time went into every detail, which added to the memorable evening.
This wedding took place at Powerhouse Park in Del Mar, a real staple to the area, and great place to hold a party! San Diego Catering company, Eco Caters, will be doing a few more weddings there soon and we are happy to get to work with them again.

Hazy Meadow Ranch, a hidden jem of Lakeside.
Many San Diegoans have heard of Hazy Meadow Carriage company, they have been providing horse drawn carriages for weddings in the area for the past 20 years. What many don’t know is that Linda Hayes has turned her ranch in to an amazing wedding and event venue. Set in the mountains of Lakeside, this venue provides a completely private and serene setting for your wedding or corporate event.
I could not get over the gorgeous views of the massive mountains and blue sky all contrasting against the lush grounds, Linda has thought of everything! Starting at around $2,000 for the day, Linda provides a well groomed lawn, a house with bride and grooms quarters ( complete with pool table and black jack!), horse drawn carriage, parking, restrooms, the ceremony site and reception site. Guest will never forget your wedding as Linda has made Hazy Meadow adorable. Check out the cute western themed housed, what great photo opts! Linda has even strung cute ping-pong lighting through-out the trees, making it very romantic at night – you can actually see the stars here !
I really think this venue would be great for a casual do-it-yourself indie wedding or a grand wedding with a southern slant, or even a corporate ho-down. Hazy Meadow has hosted parties as small as 50 upto 450! If you get a chance, you must meet with Linda and talk a walk around the area. When you do you may stumble among a wild peacock or two.
