Eco Caters is called upon by the US Coast Guard to cater a picturesque wedding at Point Vicente Lighthouse in Palos Verdes

Standing on the most southwesterly point of the Palos Verdes Peninsula, Point Vicente Lighthouse has long been one of this area’s jewels. To the landsman, the lighthouse is scenic delight and continual attraction to sightseers, tourists, photographers and painters. To the mariner, the lighthouse is an aid to navigation which marks the northern end of the Catalina Channel on the Pacific coast. It helps him plot his position and warns him to avoid the rocky schoals which surround the nearby shore and, in a heavy fog, its horn will warn him if he gets too close to the dangerous shore. The grounds and lighthouse are normally closed to the public. However, the tower and a small museum are open the second Saturday of month between the hours of 10:00 AM and 3:00 PM. Admission is free. Children under 7 are not allowed in the tower and pets are not allowed on the Coast Guard grounds.

This day could not have been more beautiful. The ceremony took place on the grounds as well as the reception. It was an elegant, yet simple affair with organic catering stationary hors d’oeuvres of Chef’s Choice Cheese Display with Market Fruit and Preserves Thai Chicken Skewers with Coconut Ranch and our Mezze Platter. Servers tray passed Turkey Sliders with Apricot, Apple, Arugula, & House Mustard, Veggie Sliders, Beef Wellingtons with Smoked Ketchup & Apricot Mustard, additionally Roasted Tomato Crostini with Bagna Cauda and Cucumber Cups with Mango, Chili & Preserve Lemon. This refreshing menu coupled with the crisp breeze made for a delightful day wedding for our Los Angeles Catering staff.

Eco Caters enters a private residence which is also Eco-friendly, how refreshing to see!
Nestled in the Canyons of Beverly Hills, this private residence was hosting a birthday party for a 2 year old baby girl.  When our Los Angeles Catering Staff entered the home we were immediately brought into their open air kitchen which was recently remodeled.  Throughout the party guests would admire the fine workmanship that had gone into the design and construction while being teased by the aromas from the organic cuisine being prepared fresh, as it always is.

Just as Tinkerbell and her fairy friends arrived lunch was being served.  They had an appropriate spread of Raw Summer Vegetable Salad with Herb Vinaigrette, Organic Beef Sliders with Smoked Cheddar and Tomato, Apricot Turkey Slider with Apple, Arugula and House Mustard & Veggie Muffallata’s.  The sides of Steamed Carrots, Green Beans and French Fries were chosen to make this luncheon complete.  Our chef created for the first time Veggie Dogs with all the fixin’s (pictured above).  This was meant for the kids, but the adults loved them too.

Eco Caters, Los Angeles Catering Division, was busy this week prepping for this amazing Thanksgiving feast

The weeks leading up to Thanksgiving this year were pretty hot in Southern California, but once the Monday before hit, so did the cold. Some of our events were moved to inside rather then on patios, this event included. Your Los Angeles Catering crew did not worry one bit being the starters that were getting ready to come out. Baked Brie with Roasted Macadamia Nuts and Homemade Preserve, Duck Confit Spring Rolls with Apricot Mustard and finally our Mezze Platter with Hummus Trio, Tabouleh Salad, Olive Medley and Fresh Pita. Is your mouth watering yet? I know your Los Angeles Caterer had lots of fun with this meal.

Moving into the main course which was served family style and perfect for a gathering of 15 people. The salad they chose was the Farmer’s Market Herb Mix of Pumpkin Seed, Shaved Purple Onion, Beylik Farms Cucumber, and Sweet Pepper Vinaigrette. The main dishes were that of kings being your Los Angeles Caterers Creole Injected Fried Turkey with Giblet Gravy and Coriander & Dried Mushroom Dusted Leg of Lamb with Zinfandel Reduction. The sides also did a little twist on tradition of Southern Yams and Vegan Corn Bread Stuffing. Our Los Angeles Caterers did not stop there. After a short break the dessert of Cardamom Scented Creme Brulee came out continuing to keep the guests warm.

With this meal, your Los Angeles Caterer, also took care of a small item, the center pieces. Growing Wild (http://www.growingwild.net/) of Manhattan Beach came through at the last moment with gorgeous arrangements fitting the black, white and red theme of the day. – Thank you GW!

Eco Caters whips up a Thanksgiving feast for a couple and the employees of their small business in West Hollywood, CA

Is there a better way to spend the holiday then with a group of people who love and respect one another? Their staff was truly wonderful. Everyone was welcomed into their home with open arms into the most inviting setup. Some of the items in the home needed to be rented such as the tables, chairs, and linens, which was not a lot, but good to know when you are planning your next affair in the home – rentals could play a small part of it. As guests arrived they had reggae music playing, the game on the flat panel, and treats that your Los Angeles Caterer carefully setup. The host chose to begin with Chef’s Choice Cheese Display with Market fruit and homemade preserves. Also on the stationary hors d’oeuvre table was our Vegetable Crudite with Roasted Onion Dip and House Ranch which are both house made.

Once all of the guests arrived and the bar was stocked with the many gifts that arrived with them, they were ready to feast. You may or may not know the process that goes into one of these meals. Some of the dishes require days of prep work in our kitchen. Therefore, our Los Angeles Catering Crew was hard at work pre-prepping everything before arriving to the home. Once there your Los Angeles Caterers finish the prep work and complete the cooking process. The buffet started with the Farmer’s Market Herb Mix with Pumpkin Seed, Shaved Purple Onion, Beylik, Farms Cucumbers, and Sweet Pepper Vinaigrette.

This group was part meat eaters and part vegans, so the host chose the main dishes and sides to be sure everyone would be happy. After the salad, mentioned above, the Creole Injected Fried Turkey with Giblet Gravy came next with the Vegan’s Shephard’s Pie with Crispy Onions and Gravy as the other option. Your Los Angeles Caterer brought the Southern Yams, Vegan Corn Bread Stuffing, and Grandma’s Gouda Mac-N-Cheese as the sides. After everyone had seconds and some thirds it was time for a 20 minute break. As the feast was settling, your Los Angeles Caterers were whipping up dessert: New Orleans Bread Pudding with Makers Mark Whiskey Sauce.

The final touches to this meal, which made it a completely eco-friendly affair, was the cutlery. This host chose to use VerTerra for the plates, Aspenware for the forks and knives, and bio-degradable cups for their drinks. Eco Caters, Los Angeles Catering Division goes a little North for a Baby Shower!!

We love to do Weddings and Corporate Events, but when we get called for a Baby Shower, the girls in the kitchen get all excited! Our host was on a tight budget, so our Event Coordinator in the Los Angeles Catering Division worked the numbers as best she could and did a great job. The most economical way we figured was to do a “drop off”. This is when the Head Chef assigned to your event comes in with the food completely prepared and cooked, uses our supplies of chafing dishes, platters, risers, everything for your buffet setup except for the table, the linen, and cutlery. Then they leave. At a predetermined time, the Head Chef then returns and picks up all the dirty items. Transfers the left over food to your containers and gets back on the road. Depending on where you are located, the price of this service varies. You also want to keep in mind what you are serving food wise. Being we are not doing any prep or cooking on site, all the food would have to come prepared to present.

For this particular Baby Shower Party, they chose items from your Los Angeles Caterers Stationary Hors d’oeuvres Menu. This way all throughout the party, the ladies could go up at their leisure for their nibbles. On display we started with Chef’s Pairing Cheese Display, Heirloom Tomato Terrine with Burrata and Fresh Basil, and Farmer’s Market Fruit Display with Local Honey. Moving down the table your Los Angeles Caterers had the Mezze Platter ith Hummus, Baba Ganouj, Roasted Red Peppers, Olives Salad, and Fresh Pita. A great grab was the next item of Tuna Tar Tar in Cucumber Cups with Avocado Oil and Preserve Lemon. The host chose Assorted wraps as well with Roasted Turkey and other being Shaved Market Vegetables with House Aioli and Olivade. To complete the table our Los Angeles Caterer had Mixed Sliders of Curry Chicken with California Golden Raisins, Grilled Eggplant with Tomato, Arugula, and Marjoram, finally Pastrami and Sauerkraut on Pretzel Rolls. Now that is A LOT of food!!

Dessert was left on the hosts platters by our Los Angeles Caterer. This way they can be served at the convenience of the guests. They chose Chocolate Dipped Strawberries and Pumpkin & Spice Chocolate Tart.

Eco Caters, Los Angeles Catering Division, feeds more folks for a birthday party in Woodland Hills

Our Los Angeles Caterers were contacted last minute to put together a birthday party, specifically a 60th for our host’s husband.  It was to be a simple cocktail party in their home with 30 people.  They wanted a Chef in the kitchen making the goods, a Server on the floor taking personal care of their guests, and a Bartender behind the bar pouring specialty wines.  Their guest list was short but of course important.  The host worked with our Event Coordinator in our Los Angeles Catering Division to come up with the perfect menu for the list.

The event being a simple cocktail party, she chose to do stationary hors d’oeuvres.  Your Los Angeles Caterers began the display with Chef’s Choice Cheese Display with Market Fruit and Preserves then moved into the Mezze Platter.  This platter includes Hummus, Baba Ganouj, Roasted Red Peppers,
Olives Salad, and Fresh Pita.  To go along with the cheese display, the host chose, Charcuterie Display served with House Mustard, Cornichon, Pickled Onion, and Garlic Rubbed Crostini.  Something your Los Angeles Caterer does not see a lot of, but loves, is the Heirloom Tomato Terrine with Burrata and Fresh Basil.  Another favorite is the Cold Quinoa Salad with Red Onion, Italian Squash, Mint, Basil, Dried Cranberries, and a Apple Cider Vinaigrette.  It is great for vegetarians and filling.  A taste for the non-vegetarians was the Spicy Chicken Skewers with Marjoram Red Pepper Yogurt.  Take note, we make our own hummus, yogurts, dressings, everything, it is made from scratch.  The final choices was the Mixed Sliders of Curry Chicken Salad with California Golden Raisins, Organic Beef Slider with Smoked Cheddar and Tomato, and Smoked Salmon with Olivade and Sauce Grabiche.

To finish off the party, they had made their own cake.  So cute, fun, and affordable!

Eco Caters, Los Angeles Catering Division, caters a luncheon company meet and greet.

Ever wonder what the person on the other end of the line looks like in person? Now a days, most of the mystery is taken with meeting chat rooms, photos via email and the ever popular, Skype. If it were not for Skype, my mother, who lives on the other side of country, would have moved here by now. It truly helps with long distance relationships of all flavors. In this case, Chainson’s Corporate Head Quarters met with their Design Team. These offices are in the same state but too far a part for monthly encounters, much less daily or weekly. Most of the them have not ever met in person. So, for the first time they met in Culver City at their Design Studio and had lunch. Not just any lunch of course. They contacted your organic Los Angeles Catering Company, Eco Caters.

As the employees arrived, they were escorted into the meeting room and began greeting and of course eating. They began with Stationary Hors D Oeuvres of Chef’s Choice Cheese Display with Market Fruit and Preserve along with Hummus Trio with Tabouli, Olive Salad, and Grilled Flatbread. The stationary items were out for a previously set time of 30 minutes. Once the time was up then our Los Angeles Caterer transitioned the table into the lunch buffet. They began with a Salad of Herb Mix with Pumpkin Seed, Shaved Purple Onion, Tomato, and Sweet
Pepper Vinaigrette. Moving into the main dishes of Herbed Chicken Breast with Lemon Avocado Oil and/or Roasted Coho Salmon with Garlic, Lemon, Black Peppercorn and Parsley. The sides that the host chose with our Los Angeles Caterers was Gouda Mac and Cheese and/or Grilled Broccolini with Garlic and Lemon.

The Host had this to say about her experience with our Los Angeles Caterers: “Yesterday went really well. This was our first time hosting a lunch between both offices and everyone was happy. I got a few good comments on the food and inquires as to where I ordered from. Nick was very accommodating and flexible. We were still setting up when he got here and he just went in the kitchen and got to work. He also found Tupperware and put the leftovers in our fridge, he was like a little food angel. I would gladly recommend Eco Caters and order from you again in the future.”

Eco Caters, Los Angeles Caterers were so excited to be serving the hard working people of South Park.

Part of our confidentiality agreement is that we can not speak on their location or names of who was in attendance. But, we can say what we served them and how well it was received. It was a pure delight for our Los Angeles Catering Staff to serve the staff of South Park. We all love the show and appreciate their hard work. This meal was considered by some their breakfast being they would be working into the very late evening and next morning. Others it was their dinner before finishing the days work and heading home. Either way they loved it and we are even more elated to go back.

Your Los Angeles Caterers began with the traditional Farmers Market Salad. As most know Eco Caters Chefs personally go to the Farmers Market and the Farms themselves to get produce. When your Los Angeles Caterer set up the buffet we usually continue with the Mains but this time we continued with the sides. The host chose Mirepoix Quinoa and Grilled Farmers Market Vegetables. With a group such as this, there needs to be variety. There are vegetarians, soy allergies and just plain eaters. The host chose a variety that would please everyone: Grilled Chicken Breast with Mango & Avocado, Roasted Salmon with Garlic, Lemon & Parsley, and Grilled Fennel with Spaghetti Squash.

After everyone went through the line and some twice. Your Los Angeles Caterer packaged up the remaining food for those who may want a midnight snack. We also left behind the dessert of the yummy Banana Cheesecake with Chocolate Ganache.

Los Angeles Catering – Malibu Catering for Eco Friendly Cocktail Party

Eco Caters catered for a cocktail party on December 20th. We set up the stationary hors d’oeuvres that consisted of antipasto with marinated artichoke, sweet pepper with arugula, marinated cherry tomato with mozzarella, and mixed olives as well as a scallop and shrimp sausage platter with house mustard and radish sprouts. While guest chatted about the hustle and bustle of the holidays, our Eco Caters servers tray passed thai chicken skewers with marjoram yogurt, argentinean lamb skewer with chimmi churri, camembert shooter with asparagus, and fresh bruschetta with tomato concasse.

The cocktail party consisted of 20 adults and 14 children, so Eco Caters made two large cheese pizzas on homemade crust with organic tomato sauce to please all taste palettes. Los Angeles catering needs are growing more environmentally conscious, and the host for this Malibu catered event was no different. The host decided to use biodegradable plates which are made from fallen palm leaves and is becoming a more desirable method for presenting food in an environmentally conscience way.

Los Angeles Catering – Organic Venice Beach Catering for Private Family Style Dinner

There is nothing better during the holidays than sharing a meal with family and friends. On December 16th, we did an all organic family style meal in Venice Beach. Before dinner guests engaged in conversation and helped themselves to Eco Caters very own stationary hors d’oeuvres that consisted of antipasto with marinated artichoke, sweet peppers with arugula, marinated cherry tomato with mozzarella, and mixed olives as well as a delicious vegetable crudite with roasted onion dip and house ranch. After the guest were done enjoying all our organic hors d’oeuvres they began to take their seats to get ready for the main course.

Prior to the main course, guests enjoyed a wild arugula salad with peach, nectarine, chevre, and apple cider vinaigrette; All of the mixed greens and herbs for the salad came from Maggie’s Farms. There were two main dishes, the first was a smoked chili rubbed tri-tip with a molasses and a fire roasted pepper sauce. The second was grilled vegetable lasagna with house made ricotta. To compliment the meal, roasted weiser farms potatoes with marjoram and thyme were served as well as a roasted asparagus marinated in grapefruit. Eating Organic is more than just food for our Venice Beach catered family, it has become a lifestyle which is why for the party we used Verterra biodegradable dinnerware which is biodegradable and compostable plates made from fallen palm leaves, flatware, cups and napkins.
