Seafood for the Future – Los Angeles Catering using Sustainable Seafood

Seafood for the Future is a program provides Los Angeles catering consumers, chefs, and restaurateurs a labeling system, supported by extensive transparent research, that will empower them to easily identify sustainable and healthy seafood choices. They work closely with many restaurants and seafood suppliers to ensure that approved products are safe- both for you and the environment. This is done by having a strict criteria for the seafood including:
- Each item is a healthy and essential contribution to a wholesome diet, with high levels of omega-3 fatty acids and low levels of mercury.
- They are all harvested from well-managed or certified fisheries, or grown on farms using sustainable practices.
- They are produced using methods that limit by-catch, reduce the carbon foot-print, and minimize damage to the ocean habitat.
- Each one supports human communities by preserving cultural values, safe working conditions, and strong communities.
Eco Caters has been recognized by Seafood for the Future as a partner in sustainability because of our efforts to serve local and sustainably fished seafood.

Eco Caters, a San Diego catering company, provided meals for Climate Change Conference
Eco Caters put together two meals to the attendees of the Climate Change Conference in San Diego. For breakfast, the San Diego catering company made an eye opening California Scramble with Avocado, Tomato, and Crème Friache, House Cured Maple Bacon, Southern Buttermilk Biscuits with Orange Honey and Sweet Butter, and Home Fries with Chive. For lunch they filled up their biodegradable plates with Farmers Market Salad, Kalua Pork, Grilled Chicken with Mango Salsa, Coconut Rice, Green Beans, and Fresh Fruit. Guest really enjoyed the food, and we think the biodegradable were a nice touch.
Eco Caters really believes in living a sustainable life and we make it easy for our clients to do so, even at an event. We have biodegradable plates. flatware made from plant starched, and even compost-able cups made from corn. We also have these really beautiful VerTerra plates. They are made from fallen leaves and water. They add a really nice natural look to any party and are a great conversation starter. Serving organic, locally grown food on compost-able plates! You really can’t get any better then that.

Alice Waters has been an inspiration to the American sustainable foods movement. She is all about using real, local foods to create delicious cuisine. She is responsible for stating the Slow Foods movement to which many Americans have caught on going to local chapter networking events. Alice Waters has also been very instrumental in gardening and sustainable foods education. She is responsible for the organic garden in front of the capitol in San Francisco and I believe she was also involved with the organic garden that has been planted in front of the White House. We have been very influenced by Alice Waters cooking and we think it might show a bit in our cuisine.
