San Diego Catering Company Eco Caters services a Two Day Event
The event started on Saturday with a very lovely ceremony. After guests mingled and chatted a bit they nibbled on San Diego caterer, Eco Caters, special Farmers Market Vegetable Crudite with Bagna Cuda, and Spinach Dip, a Mezze Platter with Hummus Trio, Roasted Red Peppers, Hearts of Palm, Olive Salad and Fresh Pita, Beggars Purse with Cherry Shallot Jam and Camembert, Blue Cheese Bison Sliders with Caramelized Onion and Pomme Fritte, and Seared Albacore with Grapefruit and Orange Slaw.
The party continued with more of San Diego Catering company Eco Caters provided food. They had an Arugula Salad with Feta, Julianne Onions and Pear Vinaigrette, Porter Marinated Tri-Tip with Green Peppercorn Sauce, Local Pacific Fish with Spinach, Mandarin Oil and Black Sesame. All food catered by San Diego Caterer, Eco Caters, is organic and purchased from local farms.
The event continued into Sunday. This wedding party hosted a brunch and Eco Caters were on hand as support staff, making sure it went off without a hitch. A brunch is a great way to bring guest together one more time. If a lot of your guest are traveling, it gives them an activity to do before they go back home, and they feel like they really got to see the bride and groom. We can do anything from a waffle station, to custom omelets and even a smoothie bar!
This couple used sustainable succulents as center pieces, which lasted well after Sunday’s brunch. These center pieces can also make great favors or gifts.

Eco Caters did an elegant green wedding for Lindy and Chad near Mt. Soledad on September 27, 2008. Among the hors d’oeuvres severed, were wild caught shrimp served as a shooter with creamy corn bisque. The crowd seemed to really enjoy our two most popular hors d’oeuvres – the organic cucumber cups with mango, jicama, chili, and lime and the wild caught seafood sausage, consisting of Wild Dover Sole, scallops and shrimp.
The wedding ceremony took place at Torrey Pines State Reserve, which made for a breathtaking scenic backdrop on Lindy and Chad’s special day. When they found their way to the reception, Eco Caters was ready to serve them with organic, seasonal and fresh cuisine. For the entrees, guests were treated to the mouthwatering toasted coriander crusted Ahi with spicy black bean sauce and the vegetarian grilled polenta with organic vegetable ragout and fire roasted pepper sauce.
Lastly, Eco Caters ended the night with Chef Nick Brune’s famous molten chocolate peanut butter cakes with creme anglaise.
The decor and design of the wedding was largely done by Lindy and Chad who are both designers in their own right. We complimented their floral design with our tray pass hors d’oeuvres design consisting of succulents and a very simple and clean presentation. The whole event was beautiful and enjoyed by all. There was even a slide show with pictures and videos from Chad and Lindy’s past. The audio visual was brought in by Eco Caters and provided by Advantage Audio Visual.

July 26th 2008 Eco Caters at Rancho Del Cielo in Malibu. A hard to reach location, but worth every turn once you get to the top and have a view of the entire Santa Monica Bay and Malibu. Check them out the beautiful Malibu venue at ranchodelcielomalibu.com. They also have a great shuttle service to bring guest up and down the mountain.
Hors De Oeuvres included a Cheese Display with Market Fruit, Farmers Market Veggie Crudite with Spinach Dip and Sundried Tomato Dip, our famous Seafood Sausage with Radish Sprout, Roasted Tomato and Onion Crostini with Bagna Cauda (pictured), and Roasted Free Range Chicken with Avocado Black Bean and Corn Crème.
We also presented a buffet with Organic Beef Tenderloin with Red Wine Jus and Crispy Salmon with Dill Mustard, alongside Truffle Smashed Potatoes, Broccolini, and Wild Mushroom Quinoa.
The event was absolutely beautiful and the guests were loving the organic catering to go along with the incredible views. This venue encompasses the dream wedding you might think of having in Los Angeles and more particularly in Malibu.
Organic Catering Company Works with San Diego Couple on their Wedding Day
The day was as beautiful as this couple and the meal was equally divine. They chose to have a plated meal and a mix of both tray passed and stationary appetizers, all prepared by Eco Caters, a San Diego caterer. The appetizers consisted of Chef’s Choice Cheese Display with Market Fruit, Chevre, Old Amsterdam Cave Aged Gouda, Saint Andre Triple Cream Brie, Irish Porter Cheddar, Blue Cheese, Apricot Preserves, Blueberry Preserves, and Fresh Organic Carlsbad Strawberries. Servers then walked through the party with Roasted Tomato and Onion Crostini with Bagna Cuda, Roasted Chicken with Avocado, Black Bean, and Corn Crème, Seared Ahi with Valencia Orange and Grapefruit Slaw.
After enjoying the company and chatter of the wedding, guest sat down to a dinner prepared by Organic Catering Company Eco Caters. The meal included Pepper Mix Salad with Apple, Shaved Parmesan, and Truffle Oil, Grilled Organic Sirloin with Marjoram, Thyme, and Basil served Blanched French Beans and Herb Roasted Potatoes, Crispy Salmon with Basil Oil and Tomato Coulis served with Green Beans, Crispy Shallot and Herb Roasted Potatoes, Grilled Polenta with Vegetable Ragout and Fire Roasted Pepper Sauce.
