Eco Caters Organic Catering for an all Organic Holiday Dinner in Del Mar
We catered a holiday dinner on December 18th at a beautiful home in Del Mar with amazing views of the pacific ocean. Organic catering in Del Mar is always a treat because we are typically working in nice homes with a view of the ocean. This San Diego catering event was a nice intimate family dinner. The host chose to have a wild arugula salad with organic apples from Smit Farms, Creole Gumbo Ya Ya served with organic white rice, a Cajun injected deep fried turkey with giblet gravy, truffled smashed potatoes and broccollini with garlic and shallots. All of which the guest devoured and came back for seconds.
To finish off the night, organic caterer,Eco Caters served some fresh made apple pie with cinnamon whipped cream made with organic apples from Smit Farms.
The Safflower Oil that we used to fry the turkey was given to Wherever Limousine for their biodiesel limo that they use for private events. For more info on Wherever Limo, go to wherevershuttle.com. The main advantage of using vegetable oil based fuels instead of fossil fuels is that vegetable oil is renewable and better for the environment. Specifically, vegetable oil fuels are sustainable and carbon neutral. Burning straight vegetable oil as fuel, is considered carbon neutral because any carbon dioxide emitted was absorbed by the plant during its growing process and counterbalances the emitted CO2. Any vegetable oil can be used such as soy, corn or walnut oil and also the grease in restaurant kitchens.
Organic catering in San Diego and especially organic catering in Del Mar and other areas of north county has been picking up and we hope to continue working more and more in that area. Holiday Party catering in San Diego was slow but steady this year and but it was an increase from 2008. We are very thankful for the events that we have catered in 2009 and we look forward to bringing organic catering to all of Southern California in 2010.
Eco Caters, a San Diego Caterer, Crafts a Green Holiday Cocktail Party in Del Mar
Eco Caters catered the Biomatrica holiday party at a private residence in Del Mar on Saturday. The San Diego catering consisted of all stationary hors d’oeuvres including Tuna Tar Tar in Cucumber Cups with Avocado Oil and Preserve Lemon, Spicy Chicken Skewers with Marjoram Red Pepper Yogurt, Grilled Eggplant with Tomato, Arugula, and Marjoram Aioli, Organic Beef Slider with Smoked Cheddar and Tomato, and a Charcuterie Display served with House Mustard, Cornichon, Pickled Onion, and Garlic Rubbed Crostini.
For dessert, San Diego caterer, Eco Caters served bite sized Banana Cheesecakes with Chocolate Ganache and Flourless Chocolate Tarts with Champagne Raspberries. It was San Diego catering at its finest and we were pleased to serve all organic cuisine to a very thankful crowd. We sourced the Chicken from Jidori Chicken, the all natural chicken out of Los Angeles. The beef was grassfed beef from Tallgrass Beef. All of the veggies were organic veggies from Suzie’s Farm along with other local organic farms in San Diego. The food was plentiful and everyone was pleased with the meal. Del Mar catering has been picking up for us lately with 4 or 5 holiday parties in Del Mar this year. People are really starting to request organic catering throughout Southern California which has helped us grow this year. Hopefully the trend towards organic catering becomes the norm and we continue to grow into 2010. Del Mar is a vital area for us and we hope that we continue to book events, weddings and holiday parties in this area.
San Diego Catering company, Eco Caters, works with Alvarado Institute of Skin Care
Another organic and very sweet holiday party in San Diego was thrown by the Alvarado Institute of Skin Care and Eco Caters provided the San Diego catering. The all organic and fair trade menu consisted of Banana Cheesecake with Chocolate Ganache (gluten free and soy free), Flourless Chocolate Tart with Champagne Raspberries (gluten free, soy and dairy free), and Chocolate Dipped Strawberries (gluten free, soy and dairy free). San Diego catering, Eco Caters also served organic and fair trade coffee from Bird Rock Roasters, the local organic roaster in San Diego with the best coffee. Alongside the coffee was hot mango black tea and hot cocoa made dairy free. The menu items were altered from our typical recipes in order to accommodate requests for gluten and dairy restrictions which we were happy to do. San Diego caterers, Eco Caters, knows that San Diego is a very health-conscious market. We often get requests for diet restrictions and modifications and we are always happy to meet the needs of our customers. It is fun to try different versions of our recipes. Because we are involved in all organic catering, people trust us with their health request, which we enjoy doing for them.
The night was cold so the warm organic beverages and bite sized sweets were perfect for Alvarado’s clients who came in to buy some products, get a massage and have a quick treat. The ladies at Alvarado wanted organic catering because their products are all natural and they offer organic options as well. They also try to minimize waste and be as eco-friendly as possible. They also requested the gluten free and dairy free items because of the effects of those ingredients on the skin. Gluten free catering is quite easy as long as you are willing to substitute alternative ingredients. Eco Caters was a natural fit for the event and we hope to do more organic catering for them in 2010. We also hope that as other companies in Southern California go green they also request organic catering for their next event.
Eco Caters a San Diego Catering Company Delivers a Simple and Organic Wedding
This was a very nice, private backyard wedding. It was simple and it portrayed the couple perfectly without any unnecessary distractions. The organic San Diego catering started off at cocktail hour with tray passed and stationary hors d’oeuvres. San Diego caterer, Eco Caters then helped the party transition into a family style meal. One of our increasingly popular choices is the family style meal. It works great for social families and those who want a smaller more intimate feel to their wedding.
With the amazing views of San Diego and the ocean, San Diego caterer, Eco Caters could not have been in a better place. The menu included stationary hors d’oeuvres which consisted of a chef’s choice cheese display with aged gouda, goregonzola, humboldt fog and chevre with honey and truffle with market fruit and preserves as well as hierloom salsa, mango salsa and guacamole with organic tortilla chips. The tray pass hors d’oeuvres were very well liked, they consisted of assorted organic sliders, including ground sirloin with smoked cheddar, roma tomato, and homemade aioli, apricot turkey slider with apple, arugula, and house mustard and grilled portabella with mixed greens, and basil aioli.
For the plated salad, we served mixed greens with goat cheese, sliced almonds, nine grain croutons, goji berries, and avocado dressing. Finally the main dishes and sides were served family style with one main and one side on each platter. The first platter was smoked chili rubbed tri-tip with a fire roasted pepper sauce with mac-n-cheese with cave aged gruyere. The second platter was grilled pacific fish with cilantro jalapeno oil alongside grilled farmers market vegetables. For dessert Erin and Ryan decided to go with Apple Cobbler instead of wedding cake which everyone enjoyed very much.
San Diego Catering Team prepares Vegetarian Meal for Carlsbad Wedding
It was a beautiful October day for the wedding of Justine and Scott. For this couple, it was really important to have an organic pescetarian meal, and San Diego Catering company Eco Caters made that happen. For those of you who may not know what a pescetarian is, it is like being a vegetarian, but they eat fish too. Due to our spot as an organic San Diego Caterer, Eco Caters gets lots of special requests for dietary, or lifestyle needs.
For this party, guest were greeted with stationary appetizers of Chef’s Choice Cheese Display with Market Fruit and Preserves, our popular Mezze Platter with Hummus, Baba Ganouj, Roasted Red Peppers, Olives Salad, and Fresh Pita, and crowd pleasing Vegetable Crudite with Roasted Onion Dip and House Ranch. This couple wanted to add something exciting and different to their appetizers, to they chose our fruit Melon Basil Skewers with Pistachio Oil, and refreshing Cucumber Cups with Mango, Jicama, Chili, and Lime.
After grazing for a bit, the party was treated to a lovely salad of Mixed Greens with Goat Cheese, Sliced Almonds, 9 Grain Croutons, Goji Berries, and Avocado Dressing. For the main meal the pescetarians feasted on Spinach Stuffed Sole with Mandarin Oil and Black Sesame. There was also Grilled Portabella Mushrooms with Chimmi Churri on a bed of Spaghetti Squash for the vegitarians. Both served with Mac-n-Cheese with Cave Aged Gruyere, and Lemon Scented Israeli Cous Cous. All items were prepared from scratch by San Diego caterer, Eco Caters.
