San Diego Caterer, Eco Caters help celebrate a birthday with breakfast!

Organic San Diego Caterer, Eco Cater, got a call for catering a from the birthday boys mother. She wanted something healthy, local, organic and fun! We helped her put together a great menu to be served at her sons birthday party. San Diego catering team, Eco Caters arrived with many breakfast treats for the kiddos. They served up  Breakfast Burritos with Sausage, Egg, Cheese, and Salsa, all made mini for little hands to pick up. Along side the crowd pleasing burritos, we had house made Granola with Bananas and Yogurt, healthy Mixed Pastries, Home Fries with Chive, and our market Fresh Fruit Platter drizzled with local honey. We also made both Orange, Pomegranate-Apple juices. The host felt good about feeding all the children Eco Caters local and organic foods. The kids loved the breakfast and it game them the energy they needed to be creative during their craft lesson at The Cove. The Cove is a very cool place in North County. They offer art and computer classes to children of all ages. You can sign your kid up for a class, drop them off for an impromptu session, or just come and use the space for anything you like! Its a great idea for a kids birthday party! Organic Caterer, Eco Caters was able to cater at The Cove, even though we were not on their preferred catering list. A lot of times all you have to do is ask to use a caterer not on the list and a venue will let you. San Diego Organic Caterer Prepares a High End Private Dinner

Eco Caters could not wait for this event. Although we do many private dinners, this one let our chefs get truly creative serving up a high end plated meal. The host chose her menu but allowed the San Diego caterer to choose the freshest items at the market, making for a super delicious and of the season meal.  Guest arrived and chatted while tasting the first of many Sine Qua Non wines, two whites. One was called ” The Boot ” and the second “Hoo Doo Man”. They then gathered around the large dining room table adorned with a beautiful centerpiece made up of local flowers by Rae Florae.  The organic catering company started with 2 plated appetizers including  our Pan Seared Tuna with Crispy Ginger, Preserve Lemon, and Scallion Oil and  Bleu Cheese Souffle with Wild Arugula and Strawberry Banyuls. After tasting another round of wines the guest were served a salad made up of  Baby Greens with Persian Cucumbers, Apple, Pea Sprouts, and Avocado Dressing, served with a nice pinot nior called “A Capella”. For the main entree guest got to choose between Grilled Ancho Crusted Ribeye topped with Caramelized Onion, and served with Roasted Beets, Horseradish, and Wild Arugula or Pan Sautéed Copper River Salmon on a bed of Roasted Fennel Orzo served with a side of Brussels Sprout and finished with a Mustard Chive Sauce, both enhanced with seasonal and local  produce. The entrees were served with a few different wines. They had “Into the Dark” and “Raven” both  Grenache, and “17th Nail in My Cranium” a Syrah. The ribeye was provided by Brandt Beef, a local farm that practices human and natural growing, creating a superb product. The chef thought the cut of beef was so beautiful, we had to show you a picture of it!

After guest had a moment to taste some more wine and enjoy their meal, San Diego organic caterer, Eco Caters served Port Poached Pear with Vanilla Bean Ice Cream and Sabayon Cream. To finish off the wine tasting evening the host choose for us to have a communal cheese board of  Chef’s Choice Cheese  with Market Fruit and Preserve, served with “Strawman” a late harvest Marsanne.  It was the perfect way to end the wine tasting dinner.

San Diego Organic Catering for an Simple but Chic Wedding

Eco Caters was so happy when this coupled booked with us! Not only is Levyland one of our favorite venues, but this couple was so laid back and fun to work with.  About a week before the wedding the weather drastically changed, we needed to move the entire thing indoors. Levyland has a large garage, which has 2 full glass walls, making it feel like a green house and not a garage at all. With a little pipe and drape and some lighting, the space turned into the most intimate affair. The ceremony was held in the main house living room, which features ceiling to floor windows. With its great views of the ocean, it makes it feel like you are still outside.

After the ceremony, Organic Wedding Caterer, Eco Caters, served cocktails and hors d oeuvres. This included our Hummus Trio with Tabouli, Olive Salad, and Grilled Flatbread and Antipasto with Marinated Artichoke, Sweet Peppers with Arugula, Marinated Cherry Tomato with Mozzarella, and Mixed Olives. Guest then moved into the reception space, which featured beautiful linens by A Perfect Table, and the most unique centerpieces made by the bride and her mother.

Dinner started with a fresh from the farmers market salad, provided by Organic Wedding Caterer, Eco Caters. This salad features the Best of the Market greens and seasonal vegetables as well as our tangy house vinaigrette dressing. For the main entrées, guest were treated to our vegetarian Portabella Mushrooms with Chimmi Churri on a bed of Roasted Garlic Angel Hair Pasta and Grilled Chicken Breast with Mango and Avocado. This San Diego Organic Caterer prepared Herb Roasted Potatoes and Grilled Farmers Market Vegetables for the sides. Guest were all very happy with the meal.

The wedding party and friends danced into the night, sipping the couples signature cocktail of blood orange soda and champagne, a must try. They ended the night with cake served by VG bakery, a local favorite. Eco Caters Helped Throw a Birthday Bash for an Orange County Family

Organic Caterer, Eco Caters, was honored when they were asked by the birthday girl to cater her event. Even though it was her day, she really wanted to wow her guests with some tasty, all organic and freshly prepared food. Organic catering company, Eco Caters came to her Orange County home and prepared the meal in her lovely kitchen. This organic caterer started out the event with our fresh from the Farmers Market Fruit Display with Local Honey, tasty Chef’s Choice Cheese Display with Market Fruit and Preserve, savory Antipasto with Marinated Artichoke, Sweet Peppers with Arugula, Marinated Cherry Tomato with Mozzarella, and Mixed Olives. All served on our eco chic Verterra plates. Guest mingled and sipped champagne as the onsite chefs were sautéing, baking and roasting.

This organic catering company set up a savory organic buffet starting with our Farmers Market Salad includeing, Best of the Market greens and vegetables with a house vinaigrette dressing. Guest were then treated to our fresh take on Jidori Chicken Pakora (grilled instead of fried) and our vegetarian Portabella Mushrooms with Chimmi Churri on a bed of Roasted Garlic Angel Hair Pasta. These dishes were served with sides of  Coconut Rice and our French Beans with crispy shallots. Dinner concluded, of course, with cake. Everyone really enjoyed our food and gave the dishes much praise. Eco Caters cleaned up the kitchen and left, all while the host and her husband enjoyed their friends and families company.

Organic Catering Company, Eco Caters prepared fresh fare for a belated holiday bash

For this event, Eco Caters, an organic catering company, was taken to La Jolla Farms to prepare some of our delicious fresh fare. La Jolla Farms is absolutely stunning, with many homes having direct views of the ocean, what a great place to get to work!  The cocktail hour started with the soft sounds of a string quartet and an organic catered cocktail hour. We provided our Chef’s Choice Cheese Display with Market Fruit and Preserve, Hummus Trio with Tabouli, Olive Salad, and Grilled Flatbread, Antipasto with Marinated Artichoke, Sweet Peppers with Arugula, Marinated Cherry Tomato with Mozzarella, and Mixed Olives, and Farmers Market Fruit Display with Local Honey. Guest mingled and chatted about their holiday festivities as the head chef and his assistants finished preparing the buffet. For this buffet, San Diego organic caters prepared a fresh from the Farmers Market Salad includes, Best of the Market greens and vegetables with a house vinaigrette dressing. For the main course, guest were treated to our Grilled Organic Hanger Steak with Fresh Herbs and Caramelized Shallot and Pan Seared Sea Bass with Cali‐Crystal Beurre Blanc. The organic caterer prepared decadent Truffle Potato Puree and our ever so yummy Roasted Tomato and Onion Panade for the sides. Guest loved all the food and the host loved being able to enjoy her party. Eco Caters cleaned up the kitchen and did all the dishes before leaving the party.

Eco Caters prepares a Holiday Dinner for a Private Family Get Together
When Eco Caters got the offer to prepare a holiday dinner for a intimate family get together we were very touched. This organic caterer felt honored to be asked into someone’s home for such a special meal. We started by preparing our delicious Baked Brie with Roasted Macadamia Nuts and Homemade Preserve. We followed that with our  House Cured Salmon Display with Capers, Egg, Purple Onion, and Dill Crème Friache and Chef’s Choice Cheese Display with Market Fruit and Preserves. The family caught up with one another as the aroma of a great dinner was being prepared in their kitchen. The host chose to have a traditional holiday feast with a twist. Organic caterer, Eco Caters was up to the challange. We started the dinner with our Wild Arugula with Smit Farms Apples, Pumpkin Seeds, and Apple Cider Vinaigrette. For the main course the family was treated to our Coriander and Dried Mushroom Dusted Leg of Lamb with Zinfandel Reduction and our House Cured Piru Canyon Honey Baked Ham. For sides guest had decadent Truffle Smashed Potatoes and our Homemade Green Bean Casserole. Everyone really liked it, especially the host, who finally got a chance to hold the dinner and enjoy her family at the same time! For dessert, organic caterer Eco Caters made a Jamaican Rum Cake with California Golden Raisins, which was a great way to end the evening.

Eco Caters loves holiday parties, but what we love even more is getting to cater them! We we pleased to be able to cater this party at a home in El Cajon. We started the night with a cocktail hour, featuring many of our tray passed delicacies.  We started with our clients favorite, Thai Chicken Skewers with Marjoram Yogurt. We then passed comforting Beef Wellingtons with Smoked Ketchup and Apricot Mustard and our Petite Lump Crab Handroll with Chive and Julienne Peppers. It was the perfect mix of food to get this party started. As guest chatted and minguled, San Diego catering company, Eco Caters prepared a fresh buffet. The buffet started with our winter salad of Herb Mix with Pumpkin Seed, Shaved Purple Onion, Tomato, and Sweet Pepper Vinaigrette. The buffet also had crowd pleasing Grilled Beef Tenderloin with Red Wine Jus and savory Pan Seared Sea Bass with Cali-Crystal Beurre Blanc. San Diego Caterer, Eco Caters grows a garden filled with organic produce and more!

For the past few months, owner and chef at Eco Caters, Adam Hiner, has been busy turning his backyard into a lush garden. The San Diego caterer uses compost from our kitchen to provide nutrients and soil for the organic veggies. Spotted in the yard are squash, carrots, beets, potatoes, spring onions, greens, tomatoes, yams, corn, berries, basil,  and the list goes on and on. This garden is completely organic and produces some very tasty treats. Recently Adam has  added Chickens! They are currently working on producing some farm fresh eggs.

Starting a garden in your back yard is a great way to use up your compost, provide yourself with tasty produce and is fun for the whole family. Here are some tips for a successful garden provided by the global healing center.

1 – Take time to plan: Plan your garden before planting your fruits, herbs or vegetables. This will ensure that you reap the best harvest possible. Make a decision on what local fruits, herbs and vegetables grow best in your area and find local sources that sell organic seeds, or you can easily buy organic seeds online. Do some research. Decide how much space you can use for your garden, and how much money and time you would like to spend. For smaller yards, a container garden works well. You can also make a small herb garden with pots and boxes. By planning you can coordinate what plants grow in the spring, fall, winter and summer to create a year long harvest.

2 – Less is more : While it may seem like a good idea to plant every edible plant that you love to eat, it may be better to start with a small, manageable garden in the beginning. In order for you to truly enjoy the benefits of an organic garden, you must be able to control it. If you plant too many of one plant, you may find yourself selling tomato sauce to all of your neighbors this summer. Start small and expand each season. City dwellers can easily create a small roof-top or balcony garden consisting of pots and raised beds. You can also grow indoors or in a greenhouse during the winter months.

3 – Choose productive plants: Choose plants that do well in your climate and geography. You can find excellent information on what grows well at your state’s extension office on-line gardening site, nursery, or the local farmers market. Remember, think locally. Nothing can be more frustrating than trying to plant avocados in Maine. Also, while some plants may grow well in your yard, think about the economics behind what you are planting. Corn, for example is cheap, but is labor intensive. Berries, on the other hand, are quite expensive in grocery stories, and are labor free. They require little money or time to cultivate, and $5 of berry-related supplies can reap over $200 worth of store-bought produce!

Our client wanted to surprise his wife with a party for her and all of her friends. The surprise was that she wouldn’t have to be the one running around and helping everyone.
