Eco Caters, a San Diego Caterer, works with Levyland in Carlsbad on an Simply Stunning Wedding


San Diego Caterer, Eco Caters, could not wait to work with this unique and fun couple. With the bride being a photographer and the husband a graphic designer, we new this wedding was going to be super cool. The couple chose to start the cocktail hour off with blackberry mojitos and  our fresh and unique passed appetizers. These consisted of  savory Roasted Chicken with Avocado, Sweet Corn, and Fermented Black Bean, zippy Carrot Orange Shooters, decadent Turkey Sliders with Apple and Arugula, refreshing Cucumber Cups with Mango, Jicama, Chili, and Lime. For dinner, Eco Caters, a San Diego Catering company prepared a mix of Mulit-grain and fresh Challah served with Honey Whipped Butter. For the salad we plated Mixed Greens with Cucumber, Tomato, Carrot, and Garlic Croutons with House Made Buttermilk Ranch. The guest has a choice of Porter Marinated Tri-Tip with Green Peppercorn Sauce served with Truffle Potato Puree and Grilled Asparagus, or Grilled Vegetable Lasagna with House Made Ricotta for their main entree. The meal went out with out a hitch and everyone seemed to really enjoy it.

Eco Caters then cut and served a delicious wedding cake made by Sweet Cheeks Bakery. With the cheery linens, by A Perfect Table, stunning and intriguing flowers by Rae Florae and seamless coordination of Amorology, this wedding was exactly what the new couple deserved, perfection.

Levyland is a great place to get married or hold any event. They offer room for up to 10 people and you can stay there for a whole week! Where the house is set makes it very private, while still enjoying views of the ocean and grasslands. If you are thinking of having an ourdoor wedding, Levyland is a great place to check out!

This Rehearsal Dinner was made flawless by Family, Friends and San Diego Catering Company, Eco Caters.

We were preparing for the wedding reception meal we got a call from the groom’s mother. Her son was so impressed with our food that she wanted to use us for the rehearsal dinner as well! This was such a complement. San Diego Caterer, Eco Caters loves doing smaller more intimate meals for family, and this family was so much fun to work with!

We started the meal out with our Chef’s Choice Cheese Display with Market Fruit and Preserve, Antipasto with Marinated Artichoke, Sweet Peppers with Arugula, Marinated Cherry Tomato with Mozzarella, and Mixed Olives, and our decadent Chilled Seafood Display with Shrimp, Oysters, Clams, Mussels, Lemon Caper Aioli, and Cocktail Sauce. Guest chatted with the soon to be bride and groom and nibbles on these goodies. They then were treated to a buffet that united both families. The buffet consisted of fresh Spinach Salad with Roasted Red Peppers, Chevre, and Tomato Vinaigrette, Carolina Pulled Pork Shoulder with Cider Vinegar and Cole Slaw on Rustic Rolls, Grilled Yellowtail with Cilantro Jalapeno Oil and Grilled Scallion, Roasted Weiser Farms Potatoes with Marjoram and Thyme, and Grilled Farmers Market Vegetables. Everyone loved the food, a guest even told us our Carolina Pulled Pork was better than anything in Carolina!

This house was rented by the Groom’s parents and was a prefect spot to hold an rehearsal dinner. The linens from A Perfect Table, were champagne and sea blue, my new favorite color combination for sure. San Diego Caterer, Eco Caters helped set up the sweet centerpieces of candles, sand and shells, creating a lovely beachy feel.

Eco Caters, a San Diego Wedding Caterer, helped throw an amazing backyard wedding in La Costa

We actually never met the bride until the big day! She planed the whole affair from afar with the help of Kristin from A Taylored Made Wedding, and a few loving friends. We really wanted to WOW the couple, and this San Diego Wedding Catering team did just that!

We started the cocktail hour with spicy Argentinean Lamb Skewer with Chimmi Churri, fresh Seared Albacore with Orange Grapefruit Slaw, and Fresh Bruschetta with Tomato Concasse, Avocado Oil, and Preserved Lemon, all prepared by San Diego Wedding Caterer, Eco Caters. While guest sipped on our house made lemonade and ice tea, the bride and groom formed their receiving line at the front door, welcoming each and every guest inside.

Once seated, San Diego wedding catering company, Eco Caters served champagne and cider along with our Herb Mix salad with Edible Flowers, Pea Sprouts, Heirloom Tomato, and Avocado Dressing. It was truly a very pretty summer salad! We then served a choice of Ancho Crusted Ribeye with Horseradish Beets and Scallion, Coconut Oil Poached Yellowtail with Celeriac, Lime Zest, and Cilantro, or Roasted Zuchinni with Parmesan and Panko finished with Deep Fried Squash Flowers and Marjoram Yogurt. The bride and groom were so please, the groom ate two plates! Guest chatted and enjoyed watching the cake being cut as they finished their meal. The cake was provided by sweet cheeks bakery and had the most delicate and wonderful design. All pictures were taken by Kayden Studio, a very cheery couple who fit perfectly into the crowd and got some amazing shots!

This home was an amazing place to hold a wedding. Their neighbors were gracious enough to allow them to hold the ceremony in their front yard, which worked perfectly. When holding a wedding at you home always try to think out of the box for ways to use the space. We removed a grill and turned the space into a bar. The family moved all of the lounge furniture onto the grass to make way for a dance floor. They had plenty of space for everything!

From the moment we met this couple, their dedication to being green and aiding in the protection of our earth was very prevalent. They chose centerpieces that used brightly colored citrus fruits, which guest took home to use later. They also chose to serve their meal on our very cool Verterra plates. They even had us save them to be re-used after the wedding! We were so happy to be able to cater their wedding.

San Diego caterer, Eco Caters, served up a filling meal of an organic Farmers Market Salad with a House Vinaigrette Dressing, savory Braised Beef Brisket with Tomato, Garlic, Olives, and Preserve Lemon, and our most popular Grilled Chicken Breast with Mango and Avocado. The sides consisted of  our decadent Garlic Smashed Potatoes, and summer fresh Grilled Farmer’s Market Vegetables.

Guest really enjoyed the meal and the couple enjoyed being able to serve everyone a healthy organic meal. We purchase most of our food from local farmers and can provide totally compost-able corn products, for those who want something different from china and silver. We even have Verterra plates. Eco Caters, a San Diego Wedding catering service, worked closely with this bride on making her wedding simple, sustainable, and beautiful. Once she decided to have a beach wedding and reception we talked a lot about having her meal served on china verses biodegradable dishes. She was worried the bio’s wouldn’t be upscale enough to fit a wedding. Once she saw the Verterra plates and utencils, she not only loved them, they made her beach wedding look complete!

These dishes and “wood” wear are a great option for those who are not set on having china. They are made from water and pressed fallen leaves. They’re non-toxic, biodegradable, compostable, durable, lightweight, convenient and downright stylish. You can get everything from plates, bowls, trays and more. They are great for any kind of event. They leave you with no clean up, and you can feel good about throwing them in your composter because soil containing Verterra can actually increase your plants growth by 15%!

For this wedding San Diego Caterer, Eco Cater created a special kid – friendly meal, since there were a good amount of children. This meal was maid up of Baked Chicken Fingers with Carrots, Green Beans, and House Ranch and Honey Mustard. The kids loved it!

The adults also really enjoyed their satisfying summer meal of Farmers Market Salad includes, Best of the Market Greens and Vegetables with a House Vinaigrette Dressing, Braised Beef Brisket with Tomato and Garlic, Grilled Chicken Breast with Mango and Avocado, Mirepoix Quinoa, and Grilled Farmers Market Vegetables, all made by San Diego caterers, Eco Caters.

The night was completed by a beautiful sunset, warm breeze and dancing in the sand. This couple also chose to rent a private beach house. We have all the information if you to would like to hold your event at a private ocean front home. It really does make your event memorable and intimate.

This April San Diego Catering company Eco Caters  helped a vegan bride celebrate with a vegan fiesta!

Held in the beautiful Seagrove Park, Del Mar.  San Diego caterer, Eco Caters, provided a vegan fiesta starting with some spicy Hors D’Oeuvres including: a Salsa Trio and Guacamole with Chips, minced Mushrooms with Cumin and delicious vegan Mexican pies with a fresh Cilantro dip. The guest sipped on fresh squeezed Lemonade, Red Wine Sangria and a refreshing muddled herb spritzer with Basil, Cilantro and Mint. A “Best of Market” Green Salad was then devoured with a light house vinaigrette. For the main meal San Diego Caterer, Eco Caters put together a vegan feast of Jalepeno Black Beans, Cilantro Rice, Grilled Seasonal Veggies with Portobello Mushrooms, with Flour Tortillas.

The menu was heavily  inspired by the couples love of Mexican food. We really enjoy working with couples who have strong desires and long wish list. San Diego Catering company Eco Caters simply loved Seagrove Park in Del Mar, it  is a great place to hold an outdoor wedding. It has great views of the ocean, soft grass underfoot and the most romantic sunsets. This is a popular spot for weddings and gatherings. Seagrove Park is also a great place to picnic, particulary on the lawn at the parks edge, overlooking the ocean. Seagrove Park sits on the edge of a bluff at the end of 15th Street, which overlooks Del Mar City Beach. It’s not uncommon for dolphins to appear beyond the shore break at Seagrove Park. The reef makes beach a popular spot for surfers.

The entrees of Grilled Polenta with Carrot and Celery Root Mash, Fire Roasted Tomato, and finished with Vinegar De Banyuls and Glazed Fennel, and Stuffed Peppers with Pine Nuts, Truffled Smashed Potatoes and Squash were both filling and fresh.

The wedding festivities started with Vanilla Wafers, Chef’s Choice Cheese Display with Market Fruit and Preserves, and our savory Mezze Platter with Hummus, Baba Ganouj, Roasted Red Peppers, Olives Salad, and Fresh Pita. Servers then passed spicy Samosas with Marjoram Preserve Lemon Yogurt, Truffled Grilled Cheese, and refreshing Cucumber Cups with Mango, Preserve Lemon, Chili, and Lime.

For the salad guest had Mixed Greens with Goat Cheese, Sliced Almonds, 9 Grain Croutons, Goji Berries, and Avocado Dressing, all made from scratch by San Diego caterer, Eco Caters. The main entree was a choice of Spaghetti Squash Checca with Carrot, Celery Root, and Fire Roasted Tomatoes, Grilled Vegetable Polenta Lasagna with House Made Ricotta, and Saag Dal with Spinach and Mushroom. All of these delectable dishes were served with French Beans with Crispy Shallot, Sesame Broccolini with Red Onion and California Raisins, and Dum Alu. Guest sipped on Lemonade, and Tropical Juice, both made by San Diego Caterer, Eco Caters. For dessert this cute couple had mini cupcakes and coffee, which was a perfect way to end this celebration.
