Eco Caters was the San Diego catering choices for a vegan wedding on Saturday at Quail Botanical Gardens.  The setting was beautiful as always and the weather in Encinitas was perfect as always.  The ceremony was held in the walled garden followed by the cocktail hour in the herb garden overlooking San Diego’s pristine beaches.  The organic hors d’oeuvres served included a mezze platter with hummus and our roasted tomato and onion dip as stationary items.  The locally sourced tray pass hors d’oeuvres consisted of melon skewers with pistachio oil and paprika, grilled asparagus with grapefruit and vegan mayo and golden beet ravioli with balsamic.  All of the hors d’oeuvres with a hit while the crowd enjoyed drinks and watched the sunset over the pacific shores of Encinitas.

The dinner moved down to the gazebo area where we served and all organic plated vegan dinner.  The first course was an organic plated salad made with arugula from Scarborough Farms in San Diego with julienne onions, stone fruit and pear vinaigrette.  For the entree the guests were served either grilled polenta with carrot and celerry root mash, fire roasted tomato, and finished with vinegar de banyuls and glazed fennel or stuffed peppers with pine nuts, truffled smashed potatoes and squash.  Some of the meat eaters at the event were very skeptical of the all vegan menu but after having eaten every bit on their plate many said it was the best food they had ever had at a wedding – vegan or no vegan.

For dessert we served a vegan cake from Stephanie’s bakery and organic fair trade coffee from Bird Rock Roasters and then the wedding party danced the night away under the stars with the beautiful setting provided by Quail Botanical Gardens – one of Eco Caters favorite wedding venues in San Diego.  The bride and groom were very happy to have had all organic catering for their wedding that was not only vegan but also bought from local farms.  The demand for San Diego catering to be vegan and organic seems to be growing quite a bit and we are not complaining.
