As autumn sets in, we here at Eco Caters are shedding our summer ingredients for the fall harvest. What better place to let those savory ingredients shine, than at a rustic wedding, in Topanga Canyon.
Mother Nature has a wonderful revolving door of produce. As the natural supply of summer’s harvest dwindles (cucumbers, peaches, strawberries, lemons, and basil), Executive Chef, Nick Brune, connects with our local, organic certified farmers to get a feel for what the fall harvest has in store. Once informed, he gets right to work! Every season, Chef Brune creates new recipes delightfully marrying the freshest local and seasonal ingredients.
“For Jackie and Adam’s wedding we knew there was a vibrant harvest of asparagus, potatoes, and mushrooms coming in from our local growers, so together we constructed a menu to celebrate the seasonal affair,” says Chef Brune.
For cocktail hour Chef Nick Brune’s team created a zippy spinach and artichoke dip with San Diego Farmers Market vegetables, an assortment of fresh sushi prepared with sustainable seafood, and glazed shiitake rolls for our vegan guests.
For the main course Eco Caters served a tossed Caesar Salad with crunchy house‐made croutons, grilled asparagus drizzled with our secret Pine Nut Sauce, roasted Portobello cordon bleu paired with a creamy Cashew Macadamia Cheese, and buttermilk mashed potatoes.
Using seasonal ingredients in Jackie and Adam’s wedding menu means that fruits and vegetables have much more vitamins and minerals than produce stored for months in refrigerator trucks. Conscious choices like these mean food is more flavor. Seasonal food also helped support our local economy because we purchase right here in Southern California. We pride ourselves taking all of these important steps without any compromise to your wedding experience.
Chef Brune loves this challenge! “By always using seasonal and local ingredients, as exemplified in Jackie and Adam’s wedding menu, we keep on my toes. There’s always a new ingredient coming in the kitchen and that keeps us evolving. I look forward to the next challenge that comes through our doors.”
