Eco Caters did our first event in San Diego on December 8th, 2007 for Cornerstone Mortgage Corporation owned by Bill Mansy. The event was held in a private condo in downtown San Diego with a spectacular view of the downtown skyline and bay. We were very happy to finally bring organic catering to San Diego. San Diego catering was missing something and we feel that Eco Caters is going to fill that void. The event was kicked off with a cocktail hour and stationary hors d’oeuvres to include California Cheese Board with Farmers Market Fruit, Homemade Mustards, Fresh Organic Sausage, Seafood Sausage with Radish Sprouts, Jams, Fruit Preserves, Mixed Crostini, and Assorted Crackers. The guests had a great time mingling and forgetting about the issues of the office. We then moved to a buffet where we served Spinach Salad with Mushrooms, Onions, and Bacon Apple Cider Vinaigrette, Grass Fed Beef Tenderloin with Green Peppercorn Sauce and Roasted Wild Filet of Salmon, Grilled Market Veggies, Truffled Smashed Potatoes and for dessert we did Banana’s Foster with Vanilla Bean Ice Cream. Everyone very much enjoyed the meal and the guests were all very interested in the food and where it came from. Organic catering in San Diego is not very abundant so people were interested on how Eco Caters was doing but mostly they wanted to know how we prepared such delicious food. All of the food was sourced from local farms and ranches and much of the produce was purchased at the farmer’s market. Although this was our first event it went off very smoothly and we look forward to much more San Diego catering where we plan to show people what true organic cuisine is all about!
